Calavasita Recipe (you have to try)!!!



First things first... Albertsons & Safeway BOTH have zucchini & yellow squash on sale this week for $1/lb or less. This is a great time to try calavasita (it's probably my favorite dish ever).

Calavasita
(true authentic Mexican food)
2 zucchini (medium size), diced
2 yellow squash (medium size), diced
2 cans of corn or 3 fresh sweet corn, cut from cob
1 medium sized onion, diced
1 tomato
1-2 jalapenos (or any pepper of your choice)
3 tbsp. butter
1 dash of salt
Melt butter over medium high heat in a medium sized skillet. Add onion and pepper(s), saute. Add diced zucchini & yellow squash, saute over high heat 2-3 minutes. Add cut corn, saute 2-3 minutes.

Reduce heat to medium, cover and allow corn & squash time to release their sugars and start to caramelize. Make sure to stir frequently. About 10 minutes.
When ingredients are slightly caramelized and thoroughly cooked remove from heat, add salt. Let cool a couple of minutes and serve!!!

Variations:
Calavasita Burrito (just add shredded cheese & flour tortillas)
or
You can add 1 cup - 1 lb minced beef or ground beef!
