BBQ Chicken Tortilla Pizza Recipe!

Budget Meals: New York Strip & Asparagus Valentines Dinner

Here's a great Valentines meal you can make for your sweetheart!  King Soopers & City Market have the main items on sale this week!  Boneless New York Strip $5.99/lb & Fresh Asparagus $1.39/lb.  I'm thinking you can make your loved one a steak meal on Sunday for around $10!

Grilled New York Steak with Asparagus

1- 16 oz. New York Strip steaks (cut into 8 oz steaks)
4- tablespoons fresh parsley, chopped
1/2- tablespoon fresh rosemary (1 teaspoon dried)
1/4 cup rough-chopped onion
1 tablespoon chopped garlic
1/4 cup red wine
1 teaspoon black pepper
1 teaspoon salt

Directions
Purée the parsley, rosemary, onion, garlic, wine and black pepper in a food processor. Rub the paste all over the steaks. Place the meat in a plastic bag or covered container, and allow to marinate overnight.

Fire up the grill (or electric grill work). If, your cooking with an outside grill, when ready to cook the steaks, sprinkle each side with some kosher salt. The salt will help draw out the juices needed for caramelization. Cook as desired.

Roasted Asparagus
1 lb fresh asparagus
2 tablespoons olive oil
1 tablespoon dried Herbes de Provence
Sea salt and pepper to taste

Directions
1.Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
2.Toss the asparagus with olive oil, Herbes de Provence, salt, and pepper. Spread the asparagus onto the baking sheet in a single layer.
3.Roast in preheated oven until tender and lightly browned, about 12 minutes.

Tip: Try putting your Fiber One in a blender or food processor to make crumbs, instead of plastic bag. It's simple, you will create less mess and you will have a nice base to work with!!!

Budget Meals: All Meals Under $5

$5 Budget Meals


Breakfast

Western Omelette
3 eggs ($0.15)
2 pieces cooked bacon crumbled (free sign up for their newsletter
here)
1/8 cup green peppers ($0.25) should fry peppers a bit to make them soft)
1/8 cup onion diced ($0.25)
1/8 mushroom ($0.35)
Final Price: $1.00
(if you get the bacon free, if not $1.40)
Preparation
Beat together 2 eggs with cooked bacon, green peppers, and onion.
Then cook until golden brown.

Lunch

BBQ Chicken Pizza
6 Tortilla's ($0.90 and sometimes free w/ coupons)
3/4 cup of BBQ sauce ($0.50 and sometimes free w/ coupons)
3/4 cup mozzarella cheese ($0.75)
1 cup cooked cubed chicken ($0.75)
1/4 cup onion, green pepper & mushrooms ($1.00)
Total Cost: $3.90

Dinner

Beef Goulash
1 lb. ground beef ($2.00)
1 medium chopped onion ($0.50)
1/2 cup chopped green pepper ($0.50)
1-13 oz can undrained tomatoes ($1.00)
1- 8 oz can tomato sauce ($0.40)
1/2 cup water (free ha)
1 cup uncooked macaroni noodles ($0.50)
2 tbsp. sugar ($0.05)
2 tsp. salt ($0.01)
Final Cost: $4.95

In large skillet or dutch oven, brown ground beef & drain excess fat. Add onion and green pepper. Continue frying until tender. Add rest of ingredients. Cover; reduce to simmer 20 minutes or until macaroni is tender.
